Another cheesecake which couldn’t escape the camera lens =P This was more difficult to construct as it was baked, and a lot harder to relase from the springform tin without the assistance of a heated knife.
It was 12°C this morning…

One of my cheesecake creations. I tend to go overboard with it sometimes but the whole concept of making a cake like this is to simply to hear the guests start screaming when we pull it out of the fridge. It was a roaring success.
It usually takes about 3 days of setting in the fridge before the overtones of lemon subside. I used pomegranite concentrate for this instead and it did the trick overnight. Strawberries & blueberries set in raspberry jelly. I still haven’t found “the perfect” cheesecake recipe. I prefer them to have that really dense texture, a slither of cheesy tang to it and i’m rather picky about it. I seriously don’t enjoy the marscapone-like flavours. There’s a quality to phillidelphia cheese that i don’t enjoy either.
Anywayz, i’m still on the search for the perfect cheesecake recipe - but maybe it’s a good thing that i haven’t found it, otherwise i’d probably feel compelled to cook it far too much and that wouldn’t be healthy! If anyone does know of a recipe for the really thick & dense style of cheesecake, i’d love to hear from you!
